"My husband and I were stationed in Sicily for 3 years and this recipe is spot on. I have been dying to try it ever since I saw in on triple D, thanks Guy! It is a bit of work but well worth it, I felt like I was back in Italy and so did my friends who I served it to, they were stationed there too. If you are looking for a delicious snack or appetizer that will impress your guests, try this Arancini. I have not found one recipe out there that is 100% accurate like this one. I think the cooling of the rice made a big difference in making it easy to work with, as well as the flour/water mixture, which is like the glue to hold it together.
