"I've made this several times and everyone loves it! I usually use only about 1/2 tsp of red pepper flakes and add coarsely chopped green olives. I serve this with bruschetta, or on a sandwich. This time I chopped the eggplant a little coarser and cooked it first then I was able to use the same pan for the remaining ingredients, much easier!"
"I loved this recipe! The first time I made it pears were not in season so I used peaches. This was ok since the peaches were a bit firm, but the second time I made it with the pears, wonderful. Both times i made it for company and they loved it I loved not only the taste but the great presentation for such a simple dessert. I was in Italy recently"
"Very pretty cookie, but quite sweet, tasted more like a candy than a cookie. My daughter thought they tasted like Girl Scout Samoas only better! I had no trouble with the recipe or the baking but I would make them a bit smaller since they are so sweet. I also broke them up a bit and used them as a garnish on strawberry shortcake, yummy! Not one cookie left and I would make them again."
