“The quesadilla cake was scrumptious! The tomatillo salsa was tangy with a slightly sweet taste from the honey. The second day I really tasted the lime juice. Served this for my friends for a scrapbooking lunch along with the confetti rice. They loved it! Another innovative and winning recipe from Rachael Ray! ”
"I also used cornstarch in place of the expensive almond flour. It worked great. However, the pie wasn't sweet enough even with the sweet crumble. If you are serving this to kids or teens I would omit the almonds. If I make this again I would definitely add more sugar."
