I made these peppers for a party and decided not to roast them but instead just steamed them for a few minutes. I let them cool and filled them. I used half monterey jack and half pepper jack cheese and used crushed lime corn chips. Wow they were delicious and I didn't have to worry about peeling my peppers or have them fall apart.... ”

I made this recipe for a party and it was sensational. Everyone wanted the recipe. I added chopped dried apricots and also added chopped green onion.I omitted the rosemary because I had some people who I knew disliked the taste of it.The dressing was great and this is definitely a keeper.
