I forgot to preheat the oven ...oops... so the prepared dish had to sit for a few minutes, but still came out fluffy and wonderful. For cheese I used a package of Cheddar, Monterey Jack, Mozzerella pre shredded mix. Also, prepped the onion in the food processor. It made them finer than I could have chopped. Thanks Alton! I always search to see if you've made a recipe first!

"This should be called "Meat Cake" not meatloaf. Delicious!! My meat was still cold when I put it in the oven, so I went by internal temp and it took an hour and half at 350 to reach 155 degrees using a metal loaf pan. Whoever suggested making extra sauce was smart. Thanks Alton!

"I tried this with canned pumpkin, increasing the flour and other ingredients by half and using a 29 oz. can. It came out great! It made 18 regular muffins and 24 mini muffins. (Cooked in separate batches.) The moisture in the canned pumpkin made them need about 10 minutes extra cooking time and I set the oven to 350. There is a video clip of him making this recipe that was very helpful, too. I made them yesterday and they have almost all magically disappeared!
