"The filling is perfect not runny, but it must be thoroughly chilled to reset the mascarpone cheese after adding the strawberries. The trick is to make the filling and leave it to chill over night in the fridge in a bowl covered with plastic wrap. You'll be amazed at the difference in texture. It is fluffy and holds it's shape, and doesn't run.

I promise you, people beg me for these cupcakes, and the filling is only runny after it's been mixed, but it sets up just perfectly if left to chill in the fridge over night, or at least for a few hours.

Also, I use a cream cheese type frosting and use part or all mascarpone cheese in it. This recipe is the best thing ever.
