Reviewed Eggplant and Green Beans in Spicy Garlic Sauce

Tuesday, Feb 19, 2013 on Cooking Channel

"Delicious! Followed the recipe to the letter but left out the green beans. Probably better than the restaurant. Highly recommend making this if you really want the real deal. Thanx Emeril. "

Reviewed Grandma's Buttermilk Waffles

Monday, Dec 24, 2012 on Food.com

"It's really not fair to rate this recipe as is since I tweaked it to my liking. I did not have buttermilk so I substituted 1 cup whole milk and 1 cup plain greek yogurt. I eliminated the salt. (Really do not need it) Used coconut oil instead of butter, added 1/2 tsp. vanilla 1/2 tsp. coconut extract and 1 Tbls. sugar and 1/2 cup sweetened grated c..."

Reviewed No-Bake Cream Cheese Peanut Butter Pie with Chocolate Whipped Cream

Sunday, Sep 16, 2012 on Cooking Channel

"Delish! I doubled all the amounts for the peanut butter filling to get it to look high like the picture shows. The measurements given were not enough of a filling. Made an impressive reaction from my company.

Reviewed Salmon with Coconut Sauce

Friday, Aug 17, 2012 on Cooking Channel

"Really great taste and easy to prepare. As far as the salmon goes, I grilled it in my electric grill pan after brushing it with the coconut oil and then put in in the pan with the sauce. If anyone had trouble with the seeds being too hard, you have to wait for the mustard seeds to pop and cook the sauce for the specified amount of time. I used"

Reviewed Uncle Bob's Fresh Apple Cake

Saturday, Aug 11, 2012 on FoodNetwork.com

"Even though I cut down on the sugar to 1 1/2 cups, it was too sweet. One cup would have been perfect. I also used only one cup of oil, which was plenty. I omitted the glaze, surely didn't need any additional sweetness.
I also added a little ground nutmeg and lemon juice to the apples so they wouldn't brown. I would probably make this again, but"

About Me

Boy, it' still hot down here, you would think October would cool off, but that doesn't stop me from my cooking and baking expeditions. Love to experiment with different cuisines of the world, especially Asian. I have a plethera of cookbooks but these days I use the internet to search out recipes, hence Cooking Channel also am an avid knitter. I enjoy cooking so many different dishes,I don't know if I can pick just one, although my friends and family love my seafood and chicken paella, and my lobster bisque. My favorite restaurant is probably Lemon Grass located in Delray on Atlantic Avenue. It's a combination of Thai, and Japanese.

Favorite Foods

Anything Asian. As far as desserts, usually two types, either it has chocolate or whole grain fruit type cakes and breads, ex. banana, fig, or any fruits that bake well. I have become a label reader and avoid artificial preservatives and sugar substitutes.
