"Dee-licious! A bit of work, but probably easier if you prepare the batter the night before. Very filling pancakes. We'll definitely make them again. I made my own candied ginger by making a ginger syrup (for Whiskey Gingers) and just coating the ginger slices in sugar and drying. Came in handy for this recipe. "
"Fantastic! I made this in the slow cooker on 'low' for 10 hours and it was delicious. Even though I'm a vegetarian, everyone at my dinner party loved it. I cut back on the chipotle peppers - only one 7 oz can and it was plenty spicy. We would definitely make this again. "
