I think I should have pounded the chicken a little flatter in order to have rolled it up properly but as it was I had enough to make a 'taco' shape out of it. I wish I would have secured it with toothpicks though to keep its shape in the oven.

"I wanted to like it. I really wanted to like it but I'm a HUGE texture person and as another reviewer said it felt like I was chewing rubber bands. The texture was awful and the smell of the tofu shirataki noodles was gag inducing. I took a few bites, decided I couldn't stomach it and tossed the rest out.

"These muffins were pretty good. As Alton Brown says, they stink up the house real pretty.
They aren't as sweet as I was expecting but I definitely didn't taste the pumpkin either, tasty nonetheless. I see why HG recommends foil liners though as I lost half of my muffin to the paper liner.
Would definitely make this again. ""
