"Was very quick, easy and delicious as well as presentable. Only 4 rating since I altered original recipe. I sliced the eggplant 1/2 inch thick and grilled it in a grill pan. This method requires less oil. Then gently cut eggplant into medium size pieces so it doesn't disintegrate when mixed with pasta. Adds a mild smokey flavor. Substituted spinac""
