I halved the quantities so I wouldn't have as much leftovers. The shrimp with chorizo as a stuffing is a refreshing change from the generally beef/pork stuffed poblanos. Will make it again.

It's tart and sweet, lovely min-presentation. Foolproof and I am not a super experienced baker. I have made them many times and will continue to do so. The cups can be filled with a savory dip to make a delicious snack.

They do stick to metallic mini muffin. I use silicon ones. But for you metallic pan I recommend this recipe found in this site: Tassie Cups with Lemon Curd Filling.

I wanted to try this before sending it in my children' pre-K lunchbox. I followed the recipe as it is written. And my children and I enjoyed them for breakfast on a weekday. They did stick a little bit to the metallic mini muffin pan, although I used more than enough spray. I do have silicon ones I will use for sure next time.

It was a hit at our last reunion, almost none was left and people had seconds! Followed the recipe almost to perfection, just added worcestershire to all of the other flavorings. I just thought it was required, but it is a very moist meatloaf and I feel good about serving it to my kids, it has lots of veggies. I did ground them in the food processor before mixing the beef, and that maybe helped to my meatloaf not binding together...

My dear husband said this was the best pork he'd ever eaten, so quite a good compliment. Juicy and tender meat. I used a meat thermometer to check the doneness, which I found in another pork tenderloin recipe. When you have all the spices, it feels very easy to prepare.

I have picky toddlers so the first time I made this they weren't thrilled, but that's usual behaviour. Now they are older and more willing to try new things, and although I still have bad food days this time the whole family loved it. I love it, and my family does too. The sauce is meaty, creamy, tomato-ey, gosh doesn't sound very healthy, but there are veggies there too, and it's totally worth it. I make it the day before I serve it to guests, I do believe it gets better overnight.
