"Omg! Absolutely wonderful, husband raved. Made day before, also used chicken stock,about 3 1/2 cups and remainder water for mushroom stock, less butter with leeks, 3 Tblsp., day of to serve,removed half of soup and used immersion blender to puree rest of soup in pot, added remaining soup back to pot with the parsley and warmed through.
