"RE: "Whisk the cornstarch with 1/2 cup water to make a slurry and whisk until thoroughly combined." The Crema Catalana did not set for me when using water in the slurry. I would instead suggest substituting milk as well as using two tablespoons of cornstarch instead of one. ""
