"This gumbo was delicious. Try to use the freshest veggies you can find and the best quality bacon as well; it really will make a difference. Also, be sure that your potatoes are all roughly the same size to ensure even cooking. I cooked my roux using butter instead of veg oil and it made no difference. Easy recipe and perfect for a cold/ rainy day""
