Easiest way to make risotto I've come across yet. As an added bonus - It's super tasty. Like others I pulled the broccoli after 15 minutes and the rice after 20. Wonderful find - will make again!

This is a really good meal! I resisted the temptation to add more seasonings and I'm actually glad I did. The flavors are very clean and blend together well. The kale is sweet and the freshness of the cilantro is nice. I used the entire chile, seeds and all, and it's not too hot. Will definitely make it again.

Loved the flavors and didn't miss the cream at all. Cooking and prep time was accurate.

I didn't think the squash would be cooked in just 5 minutes, so I scooted it to the back of the pan while I added the other ingredients. It turned out to be a good move.

This recipe made a lot, so I have leftovers, :)

I didn't have any almonds so I skipped this step. I also had committed the cardinal baking sin of not reading the entire recipe before beginning so my orange peels were in the disposal before I realized I needed some zest. I poured in a bit of Grand Marnier instead, and I don't know that I missed much.

"Lovely cookies with great flavor. The sweetness of the apricots matched the bite of the amaretto nicely. The cookie itself is very much like a shortbread in texture. I didn't have any pine nuts, so I subbed in some chopped filberts, and I don't think anything was lost in doing do. These cookies are definitely going into the cookie rotation."
