Reviewed Saffron Risotto with Butternut Squash

Sooo yummy! I lightened this recipe by only using 1 tablespoon of butter and it still came out perfectly. I did think it could have used a bit more pancetta (or I could have just cut it into smaller pieces). It was super filling and well worth the time. Will definitely make this again!
