"This was outstanding and weekday friendly. I prefer recipes where I can use the sauce in other ways and that are somewhat forgiving in ingredient proportions. This was both. The pineapple salsa was great and could take extra red pepper and onion. Next time I will reduce the chipolte just a touch and cut the whole spice mix by a quarter. It rained"
