It was fantastic. The flavors really blend well. Omit the salt if you want since the salmon is already on the salty side.

What you should ALWAYS do whenever you pur���e those types of chiles is pour them through a strainer or sieve. Of course the blended chiles have a watery texture. The mixture should not be too dry or too watery either. The flavors are fantastic and you have a silky smooth texture.

This was fantastic!!! It was a bit involved but the end result was amazing. I will definitely make it again. I used less of the hot sauce than what was asked for, fearing it would be too spicy, but it was not spicy at all. Next time, I will totally use all the sauce the recipe asks for.

I've made this dish several times now and it turns out delicious every time. It is fantastic. I always double the sauce recipe. It is truly one of the best chicken recipes that Ina has. I buy the small Cognac bottle so it isn't too horribly expensive.
