"Do NOT skip the mint, dill or lemon, people!! And dried herbs are OK but never the best. The only change I make is to buy a rotisserie chicken so I can just shred the yummy white meat and save time by not poaching chicken breasts. Also, I add red hot pepper flakes because I like everything spicy. Get a yummy loaf of French bread and dip-away!! Best soup ever. If your kids are scared of veggies, puree the carrots as well. They'll get the added nutrients and never know it :
