Reviewed crispy zucchini and potato pancakes

It was quite good - I would hold back on the salt because of the cheese. Also - since I was just making it as a side for hubby and me - I only used one large Idaho potato and a large zucchini. It fit perfectly in my 12 inch non-stick skillet - so I'm wondering if I made the entire recipe how it could possible fit into my skillet and make 30 appetizers?...
