"DELISH! My grocery does not carry whole fire roasted tomatoes so I had to make do with regular whole tomatoes (Gia Russa brand is $$ but good). This was perhaps the simplest most delicious soup I've had in a long time. The eggplant really gave it a depth of flavor. My freezer is stocked with soup on hand for the next month - yeah!"
