“Most anything wrapped in bacon is wonderful! However, having recently undergone triple-bypass surgery, I'm a bit more aware of downside of bacon fat...still love it, but need to use it sparingly.
I would think that if the bacon was precooked a bit so that some of the fat had dripped away (rather than being soaked up in the cracker),... ”

"Thisis a good basic cornmeal recipe that you can dress up or down. There's no flour to soften the batter, so it's a hearty cornbread. I omit the sugar, replace the canola with bacon fat, and add diced fresh jalapeno...maybe even some shredded cheese. This is probably a Texas variation on Alton's basic cornbread. Thanks, Alton.
